Raised in Alps, with roots in both French and Scottish heritage, Stuart Roger embodies a
distinctive cultural blend that has profoundly shaped his culinary artistry. Spending his formative years in Europe, he cultivated an appreciation for exceptional ingredients, seasonal cooking, and the art of hospitality. Chef Roger later lived in Mexico for many years, immersing himself in its vibrant culture and cuisine, which added a rich and unique dimension to his gastronomic repertoire.


With over two decades of experience, Chef Roger has established himself as a distinguished Executive Chef whose remarkable career spans luxury hospitality, Michelin-starred kitchens, and bespoke gastronomic creations. A graduate of the prestigious École Hôtelière Savoie Leman in Thonon-les-Bains, France, Chef Roger honed his craft in some of the world’s finest
establishments, including Joel Robuchon’s 2* Michelin restaurant in Monaco and Roger Vergé’s 3* Michelin Le Moulin de Mougins in the south of France. Chef Roger spent over five years working closely with the world-renowned Chef Jean-Georges Vongerichten, managing his celebrated restaurants in Mexico. During this time, he successfully brought Jean-Georges’ culinary vision to life, blending precision, creativity, and an unparalleled commitment to excellence in guest dining experiences.

Currently leading the culinary vision at Waldorf Astoria Cancun, Chef Roger has been
instrumental in crafting the gastronomic identity of the property from its pre-opening phase. Overseeing operations across five outlets, in-room dining, and a state-of-the-art convention center, he has introduced innovative menu offerings, curated amenity programs, and unique activations to elevate guest satisfaction and revenue.


Chef Roger’s journey reflects a series of transformative roles, including his tenure at One&Only Palmilla, where he oversaw food operations for nine outlets and created exclusive dining experiences for ultra-high-net-worth clientele. His leadership was equally pivotal at iconic venues such as Waldorf Astoria Los Cabos, the French Embassy in Mexico, and Michelin- starred kitchens across Europe.

Passionate about blending tradition with innovation, Chef Roger excels in creating seasonally inspired menus, tailored experiences.
